"Cooking for the Queen"
 
 
Join us for a wonderful insight into life behind the scenes at Buckingham Palace and experience some of the foods enjoyed by Her Majesty, Queen Elizabeth and her Royal family. Chef Mike will talk you through a typical day working in the kitchens of the Palace while demonstrating cooking techniques and recipes he prepared for the Royal family during his time spent there. During the evening tastings will be offered to the audience and as always when Mike gives a demonstration plenty of questions are always welcome.

I trained as a chef at Westminster College, London, England and then progressed to working in some of the most prestigious hotels in London, the Connaught and the Savoy as well as working in the kitchens of Buckingham Palace cooking for the Royal Family.
 
A move abroad gave me European culinary experience in France and Switzerland.
I have owned two fine dining restaurants before moving into culinary education in 1982.
 
 In 1996 I became the Director of Culinary at Sheffield College in England one of the largest colleges in Europe.
 
I have always enjoyed competitions in the culinary world and have gained an assortment of gold and silver awards for live cooking and pastry arts.
During my time at the college I was asked to become a member of the British Culinary judging team and traveled the country judging fellow chefs in competition. I hold the title “Master Chef” in the Cookery and food Association.
 
I have been the coach of several culinary teams guiding them towards gold awards nationwide.
 
I was privileged to be asked to be one of the chefs catering for the student Olympic games and produced 24,000 meals a day for 3 weeks out of tents !
 
 I have appeared in several television shows and was the BBC radio chef for 5 years in Sheffield.
 
Many of my recipes have been featured in magazines and cooking books.
I am currently in the process of writing a book.
 
 In 2002 I was offered a position with The New England Culinary Institute in Vermont.  I started a new life and moved to the States.  After a short time in Vermont I was asked to move to the position of Director of Culinary Education at their new campus on the island of Tortola, British Virgin Islands.  During my three years spent on this paradise island I was coach to the BVI culinary team and helped them win silver medals in Miami.
 
In 2005 I was asked to develop a program for a new school opening in Virginia.  I wrote the curriculum and moved to Virginia in 2006, The Culinary Institute of Virginia opened in September 2006.
 
I have been lucky through out my career to have demonstrated in culinary conferences and performed on the same stage as the well known American chef Charlie Trotter and other well known chefs.
 
My move to the Smithville area is particularly exciting for me. I fell in love with the town the first time I drove into the main street with my wonderful Texan wife Vicki.
 I am going to bring culinary training and demonstrations into peoples homes either one on one or group sessions where techniques from basic to advanced can be learnt in a fun environment.
 
I will also offer the service of select private fine dining dinner parties as well as the occasional celebration / wedding cake.
 
I will also be able to offer restaurant consultancy to anyone thinking about opening a restaurant and to restaurateurs wanting new concepts or staff training.
